The tree-shaded courtyard patio at this surprising wine and tapas bar in Old Town Spring has a vintage New Orleans feel. It’s not a formal Spanish Creole affair like the Brennan’s courtyard. The brick-paved space, with tables set along surrounding covered wooden walkways, echoes the eccentric quirk of Faubourg Marigny, with a Texas-y hint of “Westworld.”

Using his industry connections and knowledge, Perez said he carefully selected each wine on Plane & Level’s menu, many of which cannot be found for miles. The restaurant also offers five- and seven-course tasting menus.

Perez and partner Brian Culwell opened Plane and Level in 2020 in a cozy building on Midway in Old Town Spring. They’ve decked out the space in beautiful lights and shiny sheet metal, the kind used as the “skin” on vintage airplanes. 

Plane and Level has a loyal following who are attracted to the menu’s Spanish delicacies, Thomas’s astute wine pairings, and the precision of the preparation.
